I want to add additional columns to this stencil, however, every time I hit the "Define" button and modify the custom properties, I can modify the value but it doesn't add the columns. Any ideas?

Visio has a number of expandable shapes. The shapes are created with the maximum number of extra arms, row or columns and then a certain number of these extra entities are hidden. So when you add new rows you are actually unhidding rows that already exist.
On some shapes like the grid the custom properties are used to control the extra entities. Changing these with the Define button only changes what is prompted for. The underlying Shapesheets can not interpret the higher value because the extra sections are not in the shape.

So to add more rows and columns you will have to edit the shapesheet and this will not be an easy task.
