There must be a way to easily create a grid as a layer
(every thing but the lines of the grid transparent)
I would like to be able to lay a grid on top of photos
and incorporate the grid into the image.

I suspect you would actually have to draw the grid, with horizontal and vertical lines with an appropriate width stroke.

In Illustrator 10 (can't remember about earlier versions) there is the Rectangular Grid tool. Click and hold on the Line Segment tool to reveal it, then select it. Double-click it to define how many segments you need, then it's as simple as click-and-drag...

If you don't have this functionality, you can simply draw a horizontal line at the top, another at the bottom, then use the Blend Tool (NOT the gradient tool!) to create intermediate steps. Do the same with vertical lines.

Or draw a line and duplicate it with a specific offset, as many times as you need it.

Or draw a line at the top, a line at the bottom, lots int he middle and then use align->distribute vertical to evenly space them out.
