Greying out area in a map

Hi - Am a newcomer to Illustrator - so need help with the basics.

What is the best way to do this? I have a many layered 2 colour map. One layer is a vector line that marks out a boundary on the map, enclosing a small area in the middle. I would like to be able to 'grey out' the whole area outside the boundary (ie making it a faint grey featuring neither of the 2 colours), leaving the area in the middle inside the boundary remaining in 2 colours.

I'm just after a guide to the general steps I need to take to best accomplish this.

After you have done what you have done.
Draw another path (vector line) around the area you want to be "grayed out".

Give it a fill of what you want.

Once that is done you may not be able to see anything under the new path, so click on View>Outlines

Now. select the path (vector line) you just drew and holding your shift key down, select the Path inclosing the area in the middle.

Once both are selected

Click on View>Outlines again

Click on Window>Transform until the pallet opens up (it may already be open).

Then click on the last button on the top row (called exclude) and
ta da...
