Printing from Adobe Illustrator or Photoshop, all greys print purple. Not even close to the monitor color. What can I do to match the monitor? I am printing with HP Designjet 5500ps with UV ink.

...matching a monitor requires accurate calibration using calibration tools, the printer also needs to be calibrated accurately to the paper and ink combination you are using. Premade profiles for certain paper types can be used and usually come with the printer drivers. These aren't as good usually as custom calibrated profiles but can get you by...

...assuming your not printing through a rip, ensure you are selecting the right profiles before you print and ensure you either let the driver color manage or the source application, never both...using correct profiles for the paper type you are using.

...if you are printing through a rip via postscript ensure your rip is setup correctly with the right profiles for the paper type you are using. Investigate the rip profile settings if your using one.
