If you are talking about a gradient mesh as in a mesh with different colors applied in different areas, then the answer is use the direct-select tool or the lasso tool to grab some points, and with FILL active (No strokes on a gradient mesh!) change the color.
If you are talking about a mesh envelope applied to an object to distort it, then it will be impossible to directly color it. What you CAN do is make a copy of the mesh object, paste in front, release the envelope, discard the contents, then the left over mesh is simply a gradient mesh filled with a percentage of gray.
You can now apply colors to the mesh points, and you can set the opacity mode and percentage to make it mesh right with the other mesh object.
