GP install on SQL Server without Software

Do the applications need to installed on the SQL Server for GP7.5 or can I just install the database on it.

You don't need to have the application installed on the SQL Server. However, I would recommend that you do.

Using the Server to complete various installation and upgrade steps provides better performance. Also it is useful for test issues as it removes the network infrastructure from the equation.

Having the client installed (but not usually used) takes up a little hard disk space and no CPU power, but is extremely useful during testing and upgrades.
