If you are looking at dedicating the server to web-serving, I would install neither. And I would never invoke the GUI -- it takes up an awful lot of processor ticks.
If you are intending to run a development web server which you will also use as a workstation, then I have had problems with neither Gnome nor KDE running with Apache.
I prefer KDE, but that is bases solely on look and feel. Gnome is an excellent product, too.
Luckily, we, as users, have had the benefit of the friendly competition between KDE and Gnome developers.. ______________________________________________________________________

I was looking at the installation help files for Red Hat and apparantly you can install both during installation. I will do that and see which feels most confortable.
Not installing any of them feels a bit uncertain at the moment as I am totally new to Linux and if I am right the desk top environments will more or less work similar as the windows desktop. Can't you simply disable/close them once the web server is running? Or is this a stupid question?
Yes, you can close and re-open them whenever you want. You can also use the Desktop Switching Tool to switch between KDE and GNOME. The Ctrl+Alt+Backspace key sequence will kill the GUI, or you can do it the 'nice' way and just logoff as you do in Windows.
