global color change

I have created a kids' activity book (16 pages) in Illustrator CS. When I started, I used the color swatches that appeared in the palette. Now, I need to change the colors I used to Pantone colors. I've added the Pantone swatches to my palette, but my question is: is there an easy way to replace everything of one color with another color without clicking on each object individually and changing its color? Thanks in advance.
 
Double click on the swatch that you originally used and change the color values there. Click the Global box. You can look at the values of the Pantone color by double clicking that so as to match them.

All items that are linked to the swatch you just changed will update to the new color.

If yu want to retain a copy of your original swatch, select Duplicate Swatch in swatches pallette. Do the changes on the original and keep the Copy in original format - make sure that Glabal is NOT checked in the copy swatch.
 
You could select an item needing conversion then choose Select>Same> Fill color or stroke color or Fill & Stroke, etc. then apply desired Pantone color.
 
or, use the magic wand tool to find same/similar (depending on settings) colors to replace.
