Does anyone know the standard for running gigabit ethernet over CAT5e? Length etc.

Same as anything else, 100 meters, including patch cords. Installation quality is a big factor. A properly designed and installed Cat5e, by Standards definition, capable of 1000baseT.

Biggest difference between 100BaseT over Cat 5e and 1000BaseT is for gigabit you use ALL 4 pairs in full duplex. So installation quality is very important.
