Fun with host headers

good morning all and thanks in advance for the help.

I have a pretty (I think) simple question
I've never used apache before
How do i create a sub domain?

I have mysite.com that uses folder A for productioin
i want dev.mysite.com that uses folder B for development

This is pretty simple stuff in IIS; Create a site and add the host header, point it to the folder i want. how is this done in apache?
