We rarely use our server's monitor but when we need to we frequently find the Gnome desktop frozen - just won't respond to any input. The machine is running fine and we can connect to it is via telnet. Is there a command that will shut down Gnome and maybe also x windows if needed?

Ctrl+Alt+Backspace will kill the GUI. Its probably a good idea to not leave the GUI running when you don't need it. It takes up a lot of resources.
