Forwarding Mail

I've got Sendmail set up acting as a relay server between my exchange server on the inside and the outside world.

When I send an email and it hits the Linux server to be relayed to it's destination, is there a way to also forward a copy of the outbound email to another address.

Basically we're looking at different ways to monitor emails going out of the company and was hoping this could be one of them.
