Poor worded subject, but I didn't know how else to write it. I have, from time to time, some users that leaves us and needs to be deleted from Notes, so they don't take up a license. However, I need to still be able to receive mail on their mail address. Is it possible to have more than one "internet mail" per account? If not, how can I set it up otherwise?

Whom ever you want to receive the mail, add the departed persons email address to their account as an alias. You can do this with the admin client, open the receivers mail file and add the address to the internet address field.
