do you mean to a specific address at the external domain, or just forward it to the external domain's mail server? For the first, you'd create a mail enabled Contact and make it an alternate recipient on the mailbox in your domain.

I don't have my server in front of me, but open AD users and computers and make sure you're in Advanced View. Then on the properties of the account, I think it's the Exchange Advanced tab...you'll see the option to "Hide from...."
