Forward mail problems

We are working with a partner with email addresses, for example, @xyz.com. I've had a request from a user internally to forward a copy of all mail sent to or received from @xyz.com to a mailbox or mailboxes internally so that we have a record of all communication.

Anyone got any ideas, please?

Can you not just set this up in Outlook by creating a new rule and forwarding all emails recieved from @xyz.com to a sepecific email address? sorry if this wasnt helpful.
