for best print results?

What is the best way to put white text on to a block of colour or image so that you achieve the best printing results. I am doing a 2 pantone spot colour job the text will be going onto drk red and drk blue.

Any thoughts

Just put it on top of the colour.
As a rule I would overprint all little type (under say 20pt).
Because it would be hard to get fit if it was knocking out.
Any black over that size which goes over the colour part and white, you will see a tonal difference in the black once it's printed so you will have to knock it out (trap)
