Font substitution when exporting from indesign to pdf

I need some advice on how to avoid font substitution. I know it is a really basic thing, but in the past I used Suitcase and never had font problems. Now I have a new machine and CS6 and was told I dont need suitcase, Font Book is suppose to be adequate. But I have just exported a design to pdf and at the printers the fonts were substituted. I am trying to figure out what I did wrong. Can anyone help please?
 
Open your PDF and see which fonts were not embedded.

Using defaults, it is difficult to export PDF from ID without embedding fonts.

The most likely cause for font replacement is if the printer had to make an edit to your PDF file. If you only packed a subset of the font, the entire font would be replaced/substituted when the PDF file was edited.
