So I've been changing permissions to certain folders in a share and when doing so, the folder to which I have blocked access to users are not showing up to them either.

This isn't necessarily a bad thing, but I'm just wondering how the heck they are doing it. The only thing I've found is 'Access-Based Enumeration...a add-on for Server 2003 and I'm not seeing it on this server.

We use Access-Based Enumeration here. If your server has it installed it will show up as an extra tab in the properties of the folder.
