Folder Auditing

Ok, I know how to setup the auditing on folders but what I can not understand is that the information goes into the secuirty part of the event viewer. Can it be setup to log somewhere else? And, when you look at the security file, it has 4 - 6 entries for when one person opened one folder. I just need a log to find out what files are being used the most so we can dump the ones that no one uses. But I nned to know who as well.

Anyone else out there know about this or maybe a third party software that will do what I want?
