Can someone please explain to me what does it mean by this.

eth-s1p2 Down eth-s1p2c0 (*) On ( ) Off Down Ethernet
What is the difference between eth-s1p2 and eth-s1p2c0 ?
What does it mean by "down ethernet"

eth-s1p4 Down eth-s1p4c0 ( ) On (*) Off Ethernet
What does it mean by "ethernet" and its not down? Is this meaning "Not connected" but my ethernet2 is also not connected via a Cat5.

Thanks.

eth-s1p2c0 is a sub-interface of eths1p2 and is using VLAN tagging c0 being the tag.

the second part of your question;

eth-s1p4 Down eth-s1p4c0 ( ) On (*) Off Ethernet

this means the interface is not physically switched on.
