File/Folder Auditing

A customer recently asked me if I could identify users that may be accessing specific folders or files and at what times etc.

I started thinking about auditing. I don't know what it is, or how to use it. I'll search through Technet but until then can someone help me out with a little direction for using file auditing built into SBS 2003.
