I just created a fax cover sheet document using a premade design template. In the box that says Name, Organization, Phone number, etc, I’d like to be able to type the name of the recipient, their organization and their phone number. But when I click in that area, it simply highlights all of the text in the text box and won’t let me add anything, except for at the end of the pre-inserted text. How can I add my own information in along with the pre-inserted information? Why does it do this?

Hi kirstypie
I don't know if you have this one sorted yet ?
Anyway I duplicated the problem that you are getting - I think that the issue is that when you create the document using the wizard it inserts formatted text.
So what you need to do is save the publication as what ever you are to call it such as 'Fax Template' for example then highlight the text in one of the text boxes. Click Edit>Copy (or Control + C) to copy text to clipboard then paste the text using Control + V, then a little Paste Options clipboard should appear. Click on the drop down arrow and select the 'Keep Text Only' option. Otherwise you can paste using the menu, Edit>Paste Special>Paste as .. > select 'Unformatted Text' >OK.
Do this for each of the text boxes that don't allow editing then re-save. From then on you can open the template and you should be ready to go. It seems a bit silly that you have to go through this step but you should only need to do it once when you create your template.
Hope this helps.

THanks so much! That answers my question. Kindof a strange quirk with Publisher if you ask me, but as long as I know the work-around, I'm fine with that.
