Extruding text

I would like to extrude text. This text would have to be an object really, because I don't have the font and would extract it from the logo which I can do in photoshop. I want to then extrude the letters to the back where I can see the extrusion. I tried this in photoshop but it doesn't look like I want it to. I just copied and pasted layers. Is there a way to do this, I see it done all the time. I have access to illustrator cs and photoshop 7.0.

Illustrator CS.

Select VECTOR text or object and go to Effect>3D>Extrude and Bevel
