ext3 v/s ext2

I had formatted another server as ext3, but as some applications wouldt run on those, I used to change the entries in /etc/fstab and reboot to boot into that filesystem at will.
Now I guess Its wouldnt be a prblem from ext3 to ext2 as ext3 = ext2 + journalling. Now what will happen if I were to switch vice-versa. I actually didnt see a problem, but what happens to the journalling during both cases.
Also what will happen if I keep doing this at will. Like change filesystems whenever I want to.
Shouldnt I be actually making the filesystems before hopping between one another ???
