when using MS Project 2003 is it possible to copy or export the resource usage sheet displaying remaining work and the text fields to the left of the screen to excel, so I can then manipulate the data.

No.

You can export the resource usage data (the data on the right) using the Analysis toolbar and clicking on the "Analyze Timescaled Data in Excel" button.

The data on the left, however, will not be copied across.

This isn't a major issue, though. Just do two copy&paste operations: 1 with the data on the left and 1 with the data on the right. (I do this *all* the time -- takes just seconds.)
