I am a beginner to Illustrator, but I have text on top of a red object in Illustrator. If I export to an eps file the drawing looks the same. However, if I export to jpg or tif file types the text does not show in the red background. It is like the text is being positioned behind the red object, but I do not know why.

Can someone help me with this?

...sounds odd to me, what colour is the text? are you working in RGB and saving in RGB or working in CMYK and saving as CMYK?

Yeah. That's very wierd. If, by any chance, you used a layer for the text, try sliding it up so it's the top layer.

Also don't use transparent text. Make sure that you pick a color ofr the text fill and stroke (if stroke is used)
