Excluding 1 specific user

This is probably easy (I hope) to accomplish, but when sending an e-mail to a large group (500+ people), how can I exclude one (specific) user.
 
Open your new piece of mail, open address book with group, right click on the group to send to and select "Edit Group" from popup menu. When recipients are listed just highlight and delete any from the list that you do not want to send to for that mailing. Click on OK and continue with sending your e-mail.
