Exclude certain subfolders from Offline files

Hi,

We have a few users here using offline files, we generally redirect their my documents folder to a location on a server, then make all files offline, this works fine, I've now been asked by our MD if its possible to exclude a few subfolders from being sync'd,(so these are only available when he's connected to the network, not when he's working offline ) If i right click on the specific folder, the make available offline option is greyed out.

Does anyone know if this is possible and how to do it?
