How do I tell what information is where (folders and files) for various users?

All data is being saved on the Exchange Server.

I want to find all the mail, schedules and tasks for
a user that no longer has an account.

As I said I do have a full copy of the entire exchange
system from prior to the deletion of that user.
 
If the user's mail was being stored in a pst, then all this information that you seek will be found there. Just locate the pst and add it as a service to your Outlook profile - hoping the user had not protected it with a password in which case you are at loss.
If the mail was being stored in the mailbox, then this info is in the mailbox. Did you delete the user from User Manager and the mailbox in Exchange? If you did, you will need to restore it. If the mailbox still exists, make your NT account the Primary account for this mailbox and configure your Outlook to access this mailbox and you will be happening.
