Exchange slowness problems

On our exchange site we have actually 2 mailboxes server, we have moved all the recipients on one server and we want now to remove the second one. To prevent any problems after removing the server of our exchange site we decide to shut it down for few days to be certain that the server deletion provide any impact on our system.
When we shutdown the server the clients take about 15mn to access their mailboxes.

Did anyone have an idea how i can resolve this problem ?

Do you have a DNS server. You may want to create a CNAME of the old server and point it to the new server. This is just in case the clients are still looking for the old server. Also, if you have DNS setup make sure that you point the MX records to the new server.
