Embarrasing problem this really. Can anyone tell me how I can identify the "exchange Service Account"?

Go Computer Management on your server and look at the Services list. Look at the Exchange services. The Exchange system account is whichever account the Exchange services are running under. Often it's merely the "Local System" account.
