Exchange Mailboxes forward to another account

Hi.

We've had a person leave so we've deleted his account, but we would like to keep his email mailbox and have all correspondance (he's given his permisson) forwared on to another user. Whats the best way of doing this?

Also this mailbox is currently not tied to any user - how do we go about opening this mailbox to process the current mail?

Well instead of deleting the account just disable it, and go to the properties of the user go to exchange general/delivery options and select the user you want the mail to go to.
