Exchange Hybrid question.

We are looking to create a hybrid Exchange environment with our on prem Exchange 2010 and Exchange 365.
Our current setup is
EX1 Hub Transport, Cas, Mailbox, EX2 Hub Transport, Cas, Mailbox, EX3 Hub Transport, Cas, Mailbox, EX4 Hub Transport, Cas, Mailbox roles.
EX2, Ex3, Ex4 participation in a DAG. And EX1 the CAS for the environment.

We are planning to install an Exchange 2013 with Cas and Mailbox roles to act the connection from our on prem Exchange to Exchange 365. We also plan to migrate the mailboxes one at a time over an extended period of time.

In the documentation on installing an Exchange 2013 Hybrid it says ”All client connectivity, including Outlook client access, Outlook Web App, and Outlook Anywhere goes through the Client Access server role. Organization relationship features between the on-premises and Exchange Online organizations, such as free/busy sharing, are also handled by the Client Access server role.”

Does this mean we would need to reconfigure out current outlook clients to use the new Exchange 2013 Cas and use the Exchange 2013 server to server our OWA, and activesync connection used for mobile devices as well as the other services listed. Or can we leave the exiting Exchange 2010 server configuration and use the Exchange 2013 server as the connection between our on prem and Exchange 365.
Then modify the outlook clients to use the Exchange 365 when that mailbox is scheduled to move?
