Exchange Encryption

If I wanted to investigate an employee who might be enaging in illegal/questionable behavior from the office via e-mail, how might I go about decrypting the packets sent over the network. Exchange encryption is very strong, thus making it very difficult to view these e-mail transmissions. Can anyone let me know a good way to accomplish this task? Thanks in advance.
