Exchange disaster recovery options

I have a few questions I'm new to a multi location multi server environment and trying to get up to speed.

I have a complex network. I have two different subnets 10.x.x.x and 192.x.x.x and I want to install an addidtional exchange serverin 192.x.x.x. I have one in the 10.x.x.x subnet now servicing the local office and branch offices.
In the event of some sort of disaster I would like to cut over to to the new exchange server.
1. How can I do that with a different subnet?

2. What software can I use to mirror the data from one server to the other?

3. Can legato go across a different subnet and mirror my exchange data?

I also have a few other servers in the local subnet app, citrix, and database servers. I have a machine to back each one up. But I am not sure which application I should be using to mirror the data to each additional server in case of failure. Someone mentioned legato for this also, any others.
