Exchange and POP3 Banner alteration

Hey guys,

Hoping someone can help me with this one. I'm looking to 'misinform' the various attackers out there by altering my banner info on the Exchange server for both SMTP and POP3 services. Unfortunately, there's not a place on earth that will help you to do this...I know it has been done. Could someone help with some info?
