Exchange 2000 to Exchange 2003

All,

I'm in the middle of migrating an old exchange 2000 server to a shiny new Exchange 2003 server. I have backed everything up (3 times) and also exported critical mailboxes to PST's. I'm going to install Exchange 2003 on the new box now. After I've moved the mailboxes to the new server, how do I remove the Exchange 2000 server from the entire AD / organisation? I understand that this is not completly straightforward as I will still have some info., on the Exchange 2000 box that needs to be replicated. Anyone ever done this?
