Excel XP/Win 98SE - cell languages change

I've typed a small table in Excel which contains a column of a dozen dates. The dates are typed in Australian fashion 10/11/03 (for today's date) and some of them are showing in American (11/10/03) for some reason. If you sort by date, it doesn't go into date order and if you check the formating, it says the language for that cell is now Armenian, or Chinese (Hong Kong) or Cyrillic or anything but English (Australian)! This is just so frustrating. I've looked everywhere, tried copying to a new document, reset the formatting, read the FAQs and checked support.microsoft but can't see anything that relates. Does anyone else know of anything that could help me?
