I created a set of data using Excel and saved it as CSV for importing into a MySQL database. I am not done creating the data entries, however find that now when I open the file in Excel, some cells get converted to dates when they are not dates. In one column in particular, the data sometimes has a dash in it but that shouldn't automatically mean that it's a date. Is there some way to make not try to "guess" what the data means and to leave it as it is?

IMPORT the file into Excel via Data > Get external data > Text Files.

Select DELIMITED and the proper delimiter and the proper column type for each column.
