I use Paperless also and the character is not a problem. Make sure your odbc connection to Great Plains is set up correctly. Take a look at the Great Plains set up pdf for the odbc connection, make sure that the default boxes that are checked when you set up an ODBC connection are unchecked.
It is a known issue with eRequester and having apostrophes embedded in description strings. A patch will be available within the next few weeks to resolve this issue.
