I've created a photoshop document that will be used as a postit note. The printers want me to convert this photoshop file to outlined eps file, with file suitcases. I'm not familiar with these terms at all could someone push me in the right direction?

You may have originally sent them a PSD file which does not include font files. See if they will accept a PDF file saved from Photoshop so that the fonts are embedded.

To outline fonts, you will need a program like Illustrator.

You can create a work path from type right in Photoshop.

Select the type layer. Go to Layer>Type>Create work path.
