eps editing-bad quality

I am trying to open an eps file generated by gnuplot.

Whenever I open it as an eps file and edit a little, after
I save it again as an eps the quality is horrible.

What is the best way to edit gnuplot generated eps with gimp so that the image quality does not degrade?
 
I suspec that Gimp resaves your eps image as a bitmap in an eps wrapper (hence the horrible quality).
What are you trying to do with your gnuplot output?
Without knowing that it's difficult to make a suggestion.

If you want to keep your file as EPS, then you need to use a vector editor, not a bitmap editor like GIMP. You might like to try tools like Inkscape or OpenOffice.org Draw, both free software.
