Enterprise Pool....1 server?

Hi Folks,

I'm new to this software but have been tasked with rolling it out to our company infrastructure....The quest I have is this...

We are going for an enterprise roll out of this product (As this is what we are licensed for) and I want to know if it is stable to have an Enterprise pool consisting of only 1 server running all services? The only exception to this will be the CDR and IM archiving server.

I will be adding more servers to this as I complete the pilot phase but due to a lack of load balancers I would like to run it with one server only to test the usefulness of the software.
