Encryption in Mail forwarding

I have set up mail forwarding for any mail sent to me to be delivered to another SMTP address outside of my organization using Outof Office Assistant. Is it possible to actually encrypt automatically forwared mail?? I know how to install digital ceriticate from such bodies as RSA or Thawte, but the thing is assuming that I am using mail client like Outlook 97 or Exchange client 4 or 5, would the actual certificate be installed on the local machine(as part of windows) or the Exchange server? To what extend if the certificate is installed on the server would the local Administrator be able to manipulate the server (e.g. take ownership, change password for the user to use the cert??). Would forwarded done by means of 'Delivery Option' instead be able to achieve encryption by similar means?
