Encrypting email advice please

I use Gmail but have it downloaded to Outlook 2003; the gal I work with uses AT&T online. We both work from home offices and much of what we email to each other is medical information. Therefore the HIPAA rules come into play.

How can we make sure that our emails are safe? Is there a program we need to use in order to encrypt the emails? She is much less computer literate than I so ease of use is essential.

Ant to be quite honest about this whole issue I'm not exactly sure what encryption really means or how it works. Any help, advice or good websites to point me to (that are written for the lay person!) will be greatly appreciated!
 
encryption requires keys at both ends. One to encrypt, one to decrypt. So whoever you send encrypted mail to would need to have your public key, and vice versa.
