Embedded fonts

I just made my first attempt at preparing a poster to be printed by my local copy shop after being prepped by the Pack-and-Go wizard, and ran into problems with the embedded fonts.

Is there any source of information about what fonts are legally embeddable -- other than having to try various ones in a publisher document and then using the Commerial Printing/Tools/Fonts command. Why do I have all these fonts if I can't use them? Arggggh.

Also, I have no experience using font managers. It would be so nifty if I could somehow arrange my fonts into sets, such as the standard ones I use all the time and then those ones I rarely use but don't want to delete completely. What do I need?
