I have a pdf file that I am trying to edit with AA 6 Pro. It uses an embedded font that I do not have, nor can I find it anywhere to download and install. If I add text, I cannot use the embedded font. If the font is embedded, why can I not use it? As well, if I copy the text and paste it, it won't paste in the original font. I can only edit the text if I change the font, but then they do not match.

How can I edit pdfs with embedded fonts that I do not have installed?

Despite all of the poorly executed and half-baked editing features in the latest versions of Acrobat, PDFs are not MEANT to be edited. Any detailed document editing should be done in the original authoring application.

Fonts are likley subsetted. That means only those characters that are in the document are included. This preserves portability while minimizing file size. Also, the subsetting procedure, on some systems, will encode the font incrementally, which means character definitions are not stored in the corresponding "slots". Hard to explain, but the "A" character is decimal 65, so should be character 65, but may not be.

This means the text you SEE may not be drawn with the characters you can type, and that you cannot type any characters that aren't already in the document.

If you simply must attempt to edit a PDF, try doing it in Illustrator, not Acrobat. It won't solve your font problem, though. Sorry.
