When I open the image in Photoshop 7, it says "This document has an embedded color profile that does not match the current CMYK working space.
Embedded: Europe ISO Coated FOGRA27
Working: U.S. Web Coated (SWOP) v2
How do you want proceed?

3 options:
- Use the embedded profile;
- Convert document colors to the working space;
- Discard the embedded profile (marked default)

What option need be selected?

...general rule of thumb is to use the embedded profile if you are unsure what to choose...

...if you come across an image that doesn't have a profile, then it is advised you assign one with your working color space...

...converting a profile to another profile is different to assigning a profile, converting will often shift the color numbers, sometimes dramatically, sometimes very little depending on the profile used. The profile is meant to essentially produce a more accurate result on your output devices color space....

...assigning a profile affects the appearance only, not the color numbers, think of these as a layer, assigning is for images that don't have a color profile, this can be important when dealing with RGB image conversions, a better conversion of images from RGB to CMYK can be obtained from assigning an RGB profile (typically Adobe RGB 1998) and then converted to your working color space...

...some prepress workflows remove color profiles in the RIP on-the-fly from cmyk images, and then apply a press profile to simulate what those color numbers will look like on press...

Two more words: color profiles change with color mode, so - Europe ISO Coated FOGRA27 - as you mention means you have a CMYK file.

Yes, this files was CMYK. So should I use the embedded profile?

..converting will effect the colour numbers and therefore change the colours...
