I have a form full of unbound text boxes, and want to email the contents of these fields.

Is this possible?
do I have to now create a table and redo the form?
I want to send an email but without an attachment ideally - just have the text-box name and contents embedded in the text of the email.

If you provide me your email address I can send you a sample database that takes advantage of DougP's FAQ (in the General Access forum) on this subject. It uses all unbound textboxes to send text.

Thanks,
my email address is matpj@another.com

Is it possible to email automatically - i.e. specify an email address, and press a button that will send the mail, rather than bring up the mail-program to do manually?

You can accomplish that using the SendObject method. It wouldn't be too hard to setup. DougP also has a FAQ on this subject in the General Access Forum, I suggest you check it out!
