Hello all.

I am setting up several apps that require email notifications. For example nagios. My question is can I use our internal email server for the SMTP(exchange)? How do my linux apps know what to use to send out emails? Do I need to install a mail server on my fedora server?
 
Just install sendmail. If it is configured to use DNS on your network, it should be able to find the MX record for your mail server.
